Chardonnay Lakeside Salad

The sun was shining, the lake was glistening and the wine was pouring at our 2022 Tahoe Member Event on Saturday. We were so happy to see so many familiar faces and welcomed some new ones into our club. Thank you so much to everyone who joined us on what was a quintessentially beautiful Tahoe evening.

Due to flattering request, below is our recipe for the Double Bond Lakeside Salad.

 

Dijon Double Bond Chardonnay Lakeside Dressing

·      3/4cup Mayonnaise

·      1/3 Chopped Yellow Onion

·      2 tbsp + 1tsp Whole Grain Dijon Mustard

·      1.5tbsp Sugar

·      2tbsp Honey

·      1 splash Apple Cider Vinegar

·      2-3 splashes Double Bond Chardonnay

·      Dash of Ground Black Pepper

·      2 tbsp Extra Virgin Olive Oil

·      Poppyseeds

Add all ingredients except poppyseeds to a blender and blend well until very smooth. Taste and amend to your preference; I usually added more wine and a bit of honey and vinegar to balance. On a low speed add poppyseeds to your preference (~1-2tbps is a good guide.) Cover in airtight mason jar and store in refrigerator until it’s ready to use. It will thicken in the fridge and also makes a delicious dip for bread.

Double Bond Lakeside Salad 

·      Organic Mixed Salad Greens

·      Chardonnay Lakeside Dressing

·      Dried Cranberries

·      Pine-nuts

·      Shaved Aged Parmesan

Toss greens with dressing, cranberries and pine nuts. Top with shaved Parmesan and serve immediately. Variation: toast pine-nuts at 400 degrees until golden brown and allow to cool before tossing into salad for a more flavorful pine-nut flavor.
