What’s In a Name?

In chemistry, a double bond is a stronger, more reactive, and rare connection between two atoms. The inspiration in our winemaking approach can best be described by the bonds we share with this fascinating science and intoxicating art, interacting to innovate and redefine classic wines.

Our Scientific Approach To
Vinting The Finest Wine From the Central Coast

Boutique From The Start

We seek and embrace the soils perfect for the varietals we vint. We don’t restrict ourselves or confine grapes to an estate. We go where the finest grapes grow, where limited quantity and exceptional quality are the emphasis

Double Bond Vintner on Aging Pinot Noirs

It is common in France and other classical wine regions to age Pinot Noirs for several years before drinking them. They are encouraged to age considerably longer than most people on the West Coast are accustomed to. Walking through your local wine shop here in the New World, you would not be out of place to see a 2018 or even a 2019 Pinot Noir.

There are many reasons for this high turnover of vintages, but the speed to turn over vintages as quickly as possible has never been included in our winemaking philosophy.

Although we specialize in Central Coast varietals, we deliberately design them to be aged like the classical varietals, where Pinots are allowed to age 20 years and beyond according to their potential.

Our wines barrel age for up to 20 months and bottle age a minimum of two years and often longer. The 2013 has matured beautifully and is ready to drink now.
